Orange Knots


Wouldn’t these be great for an Easter brunch. I’ve made them before and not only are they delicious but they’re easy. You can make them ahead of time so you’re not so rushed right before your brunch.
Orange Knots
12 Rhodes Dinner Rolls, thawed but cold
1 medium orange rind, grated
½ cup sugar
¼ cup butter, melted
Citrus Glaze:
1 cup powdered sugar
1 tablespoon butter melted 3 tablespoons orange juice
½ teaspoon vanilla extract
Mix grated orange rind with sugar. Roll each roll into a 9-inch rope. Tie in a loose knot. Roll each knot in melted butter and then in rind/sugar mixture. Place on a large sprayed baking sheet. Cover with sprayed plastic wrap and let double in size. Remove wrap. Bake at 350° F 15-20 minutes. Remove from pan and place on cooling rack. Brush with citrus glaze while still warm.

Chicken on a Nest Treat

This is a fun and easy activity to do with your grandchildren for Easter or Springtime. You’ll need: Ingredients for Rice Krispie Marshmallow Treats (recipe below), jellybeans and chickens. Follow the directions for the marshmallow treats and when cool enough to handle form into a nest shape. When firm, add jellybeans and chicken.


Rice Krispie Marshmallow Treats (This recipe comes from a Kellogg’s Rice Krispies Box)

1/4 cup butter or margarine (1/2 stick)
6 – 10 ozs. regular marshmallows (about 40) or 4 cups miniature marshmallows
6 cups Rice Krispies
1. Melt butter in 3-quart saucepan. Add marshmallows and cook over low heat, stirring constantly, until marshmallows are melted and mixture is syrupy. Remove from heat.
2. Add Rice Krispies and stir until well coated.
3. Press warm mixture evenly and firmly into buttered 13 X 9-inch pan. Cut into squares when cool.
Yeild: 24 (2-inch)squares

Butterfly Sandwiches

Each person can create their own using peanut butter, jam, raisins, carrots, celery, grapes. The possibilities are endless and they’re so much fun to eat. While you’re making the sandwiches you can make up poems or songs about butterflies. I’ve included one that my grandchildren and I made up.

Butterfly
Butterfly, oh butterfly
Dancing across the sky.
Butterfly, oh butterfly.
First you are low then you are high.

Laramie Loaf

This is a delicious and easy sandwich to make for a large or small gathering. You can prepare it ahead of time then bake right before you’re ready to serve. The leftovers are good too, that is if you have any!

Laramie Loaf
You’ll Need:
1 loaf French bread
3 oz cream cheese
2 ½ C grated cheese
¼ C Mayonnaise
2 tsp prepared mustard
1 ½ tsp Worcestershire sauce
ripe black olives
4 chopped green onions
2 tomatoes
10 slices crisp cooked bacon

1. You will be slicing the loaf in half lengthwise but before you do, score across the top where you will slice the sandwich for individual servings.
2. Spread butter on the top half of the loaf then combine the following and spread on the bottom half of loaf:
grated cheese
cream cheese
mayonnaise
mustard
Worcestershire sauce
olives
3. Sprinkle on the remaining ingredients:
onions
tomatoes
crisp bacon
4. Put top & bottom together and wrap in foil loosely so steam can escape.
5. Bake @ 350 degrees for 30 -40 minutes. Let cool slightly and cut where you scored earlier.

Octopus Banana


I saw this idea in a magazine and thought I would try it out on my 2 year old grandson. He thought it was a toy, not something to eat.

Just peel the banana about half way and cut out the fruit, leaving the skin. Make 8 legs, add eyes ( I used permanent marker) and put on a plate. Now you have a fun way to serve a nutritious snack.

Heart-Shaped Cupcakes

Aren’t these darling. To create the heart shape, place a small marble or a 1/2-inch ball of aluminum foil between each liner and one side of the tin (a great job for kids). This will push the paper into the batter to form the notch in the heart.

Valentine Breakfast Ideas

I had this great idea for a Valentine’s Day breakfast – everything in the shape of a heart including the napkin. Well, it worked out to be easy for the toast and the fruit in a heart bowl, but the egg was another story. I put a cookie cutter in the frying pan and poured in the egg. I pressed the cookie cutter down hard with my hand so the egg wouldn’t seep out. That was fine until the metal cookie cutter got hot. When it was time to turn the egg, there was a problem. Of course it was sticking to the sides of the cookie cutter. I got a knife and loosened the edges and when I took the cookie cutter off it kept it shape, YEAH! I flipped it over and finished cooking. Was it worth it? Maybe if my grandkids were here to eat it.
