Corn and Tomato Salad
1-1/2 teaspoon minced garlic
1-1/2 teaspoon olive oil
1-1/2 cups drained corn (or fresh corn boiled for 5 minutes)
3 medium tomatoes, chopped
2 tablespoons fresh basil, chopped
4 teaspoons balsamic vinegar
1/2 teaspoon black pepper
Sautee garlic in oil for 1 minute. Add corn and cool for 5 minutes more. Remove from heat and let cool to room temperature.
Stir together corn, tomatoes, basil, vinegar, and pepper in a large bowl.
Serve immediately or refrigerate up to 2 days.
